Who Says Ice Cream is Cheating?

Being that yesterday was the first day of Spring, I thought I’d transition into a more spring/ summer cooking style, and of course, that comes with the most wonderful desserts. One of my favorite parts of Spring eating are all the varieties of frozen foods that are possible, while still having tremendous health benefits or staying away from junk eating!


Healthy Choices

Having dessert doesn’t always mean picking the unhealthy choice or cheating, especially when you put a fun twist on original desserts! My favorite desserts to make homemade that don’t have me hating myself after indulging have been different renditions of Banana Ice Cream.

Banana Ice Cream

The coolest thing about banana ice cream is that it is literally just a banana; no cream, no dairy, no added sugar! Because of the banana’s density and texture, pureeing a frozen bananas give you results impeccably similar to the consistency of ice cream, minus the bad stuff!  Another great thing about the frozen fruit is that it doesn’t have an overpowering flavor, so any add-ins still stand out, and can even give you a completely unique taste.

But How?

To get the ice cream consistency, simply add sliced, frozen bananas into a food processor or strong blender. Blend on high until the banana starts to clump and become thicker, then pulse the bananas for the remaining time until it becomes thick and creamy, or has reached your desired consistency.

Easy Peasy! Below are some of my favorite renditions of banana ice cream:

Banana Ice Cream, Original:

  • 2 Frozen Bananas, sliced
  • 1/4 Cup Mini Semi-Sweet Chocolate Chips
  • Coconut shavings, for garnish

Chunky Monkey Ice Cream:

  • 2 Frozen Bananas, sliced
  • 1 Tbs. Dark Chocolate, melted
  • 1 Handful of Cocoa Nibs

Peanut Butter Cup Ice Cream:

  • 2 Frozen Bananas, sliced
  • 1 Tbs. Peanut Butter, or any nut-butter of your choice
  • 1/4 Cup Mini Semi-Sweet Chocolate Chips

Very Berry Ice Cream:

  • 2 Frozen Bananas, sliced
  • 1/2 Cup of frozen berries
  • Splash of Vanilla Extract

Coffee Ice Cream:

  • 2 Frozen Bananas, sliced
  • Pinch of Salt
  • 1/2 tsp. instant coffee grounds
  • Splash of Vanilla Extract

Simply add the bananas to the processor and blend until bananas start to clump. Add the remaining ingredients or add-ins, and finish by pulsing until bananas reach a thick, creamy consistency.

These recipes are so quick and easily, and require minimal ingredients or effort. It’s a great snack or dessert for warm weather, so get your blenders/ food processors ready and puree away!!!
